This simple, nutritious, delicious recipe for roasted artichoke hearts swaps out fresh for frozen artichoke hearts, making it easy to incorporate this veggie into any weekday meal.

Roasted Artichoke Hearts:
Ingredients:
12-ounce bag frozen artichoke hearts
2-3 tablespoons of extra virgin olive oil
Sea salt
Black pepper
Smoked paprika
Lemon
Directions:
Preheat the oven to 425 degrees.
Thaw frozen artichoke hearts then wrap and press them between paper towels to remove excess water.
Transfer to a medium size mixing bowl and gently toss with olive oil to coat. Sprinkle to taste with crunchy sea salt, freshly ground pepper and smoked paprika to taste.
Transfer to a large baking sheet.
Roast 20-25 minutes, tossing halfway through.
Remove from the roasted artichoke hearts from the oven
Plate and give it a good squeeze of fresh lemon juice.
Serve as a side dish, salad or grain bowl topper or enjoy as a delicious, healthy snack.
