Aubergines Stuffed with Paneer and Served over Coconut Dal

An inspired food and wine pairing can elevate a meal, making it so much more than the sum of its parts. It’s a little bit of alchemy, but when you get it right, you know. When I interviewed head wine-maker David Baird for @VinePair, we discussed his love of cooking, favorite cookbook author, and current favorite recipe and wine pairing.

David recommended I make Aubergines Stuffed with Paneer and Coconut Dal from Yotom Ottolenghi’s newest cookbook, FLAVOUR, and pair it with Folktale’s Orange Solera Wine. It was a match made in heaven! The Orange Solera is not available again until they bottle the next vintage, but David recommends Folktale’s 2019 Brosseau Vineyard Syrah as a great stand-in.
